Recipe Ingredients for Pumpkin Donuts

1/2 cup light brown sugar
1 cup pumpkin puree
1/2 cup 2% milk
1 large egg white
1 tbsp margarine
1 tsp vanilla
1 cup flour
1 tsp baking soda
1/2 tsp baking powder
1 tsp cinnamon
1/2 tsp nutmeg
1/2 tsp ginger

Recipe Directions for Pumpkin Donuts

  1. Preheat oven to 350 degrees

  2. Coat mold or muffin tray with cooking spray

  3. beat together sugar, pumpkin, milk, egg white, margarine, and vanilla.

  4. Add flour, baking soda, baking powder, and spices, and mix until completely incorporated.

  5. Put batter into mold/tray and bake 15 minutes for mini muffins and 20 minutes for donuts.

  6. When cool, dust with confectioners' sugar if desired.

  7. Store in airtight container at room temperature for 2 days or freeze for up to 1 month.
