These are officially the best pumpkin muffins or bread I've ever had, even with a few health-conscious adjustments.

Recipe Ingredients for Pumpkin Delicious Muffins (Reduced fat/sugar)

4 eggs
3/4 cups sugar
1 cup apple sauce
15 ounce solid pack pumpkin
1 1/2 cups flour
1 1/2 cups whole wheat flour
1 teaspoon salt
1 3/4 teaspoons baking soda
2 3/4 teaspoons ground cinnamon
3/4 teaspoons ground nutmeg
3/4 teaspoon ground cloves
1/4 teaspoon ground allspice
1/2 cup raisins

Recipe Directions for Pumpkin Delicious Muffins (Reduced fat/sugar)

  1. Preheat the oven to 375 degrees F.

  2. Grease two loaf pans or 24 muffin cups. Combine the eggs, sugar, oil (applesauce), and pumpkin in a large bowl, and stir until smooth.

  3. In a medium bowl, mix the second set of ingredients with a wire whisk. Add the nuts and raisins**. Add to the egg mixture and mix thoroughly. Fill the loaf pans or muffin cups with the batter.

  4. Mix the last 2 ingredients in a small bowl. Sprinkle over bread loaves or muffin batter.

  5. Bake the bread at 375 degrees F for 1 hour and 10 minutes, or the muffins for 35 to 40 minutes. When the bread is done, a toothpick inserted in the center will come out clean.

  6. Yields 2 loaves or 24 muffins.***

  7. Notes:

  8. * You may substitute 4 1/2 teaspoons of pumpkin pie spice for the starred ingredients. Be sure to note that you still need cinnamon for the topping. 

  9. ** If you don't care for raisins, you could add 1/3 cup more nuts instead. 

  10. ***Apparently this recipe makes 24 medium-sized muffins.

  11. I used half applesauce for oil, cut the sugar by 1/3 of a cup (Really could have done more). I didn't have allspice, so I left that out, and I added a sprinkle of ginger and a splash of vanilla. Since I also prefer no nuts (though pecans would've been delicious) I made a Crisp mixture of butter, oats, brown sugar, flour, and cinnamon, and used a little more than a cup of that instead, pre-baked to a crunchy granola consistency. Despite the high altitude where I live, the muffins finished almost 12 minutes early. I'm not sure if that was a difference in tin size or what. Just keep an eye on the done-ness level! Raisins would also be delicious in this recipe, or even chunks of apple.
