Lower in sugar and fat than standard pumpkin filling. I omitted the crust and call it custard.

Recipe Ingredients for Pumpkin custard (sort of)

15 oz pumpkin
1/2 cup light unsweetened soymilk
170 grams agave nectar (1/2 cup)
2 large eggs
1/8 tsp ground clove
1 tablespoon cinnamon
1/4 tsp ginger
1/4 tsp orange extract
2 tsp vanilla

Recipe Directions for Pumpkin custard (sort of)

  1. Add eggs to bowl and whip to blend.

  2. Add remaining ingredients and mix thoroughly.

  3. Pour into oven safe dish (I lightly greased it).

  4. Bake 60 to 65 mins until done.
