Easy and rich - like pumpkin pie without the crust. Can lessen pumpkin or add additional half and half if a lighter pumpkin flavor is preferred.

Recipe Ingredients for Pumpkin custard

1/3 cup sugar
1 tsp cinnamon
1 tsp nutmeg
1 tsp ginger
1/2 tsp ground cloves
1/2 tsp salt
2 large eggs
1/2 cup egg beaters
1 1/2 cups half and half
1 1/2 cups pumpkin

Recipe Directions for Pumpkin custard

  1. Mix spices with sugar (use half splenda blend instead of 3/4 cup regular sugar)

  2. Mix in pumpkin, eggs, and egg beaters, blending until smooth

  3. Add in half and half

  4. Pour into custard cups

  5. Place custard cups in a shallow water bath in a oven preheated to 375

  6. Bake at 375 for 15 minutes, then 325 for another 20-30 minutes
