Healthy pumpkin pie flavor, without the crust and with reduced sugar and fat (and no salt).

Recipe Ingredients for Pumpkin custard

1/8 c brown sugar
1/2 tsp cinnamon
1/8 tsp cloves
1/4 tsp ginger
1/8 tsp nutmeg
1/8 tsp allspice
7 1/2 oz pumpkin puree
1/4 c egg beaters
1/2 c skim milk

Recipe Directions for Pumpkin custard

  1. Preheat oven to 350 degrees F.

  2. Mix sugar and spices, then stir in pumpkin and mix well. Add milk and egg beaters and mix until smooth.

  3. Pour into large individual oven-safe custard dishes to bake. Place dishes on a baking sheet in oven. Bake about 40-50 minutes.
