A nice alternative to pumpkin pie with a regular crust.

Recipe Ingredients for Pumpkin Custard with Chocolate Ganache and Nut Topping

30 oz pumpkin pie filling
2 eggs
12 oz sweetened condensed milk
4 oz semisweet baker's chocolate
1 oz 1% lowfat buttermilk
1/2 tsp vanilla extract
1/2 tsp allspice
1/2 tsp nutmeg
1 tsp cinnamon
60 grams pecans, finely chopped
15 grams walnuts, finely chopped

Recipe Directions for Pumpkin Custard with Chocolate Ganache and Nut Topping

  1. Beat together pumpkin, sweetened condensed milk, and eggs in a large mixing bowl, until egg becomes fluffy.

  2. Pour pumpkin mix into two sprayed glass baking dishes, preferably 9" rounds.

  3. Bake for 15 minutes at 400 degrees F, then 45 minutes at 325 degrees.

  4. Remove from oven and allow to cool.

  5. Over low heat, melt the chocolate, stirring constantly.

  6. Pour in the buttermilk and stir.

  7. Stir in the vanilla extract and half the spices.

  8. Combine remaining spices with chopped nuts.

  9. Pour chocolate ganache over pumpkin and smooth out with a rubber spatula.

  10. Sprinkle nuts evenly over chocolate.

  11. Allow to cool, then cut and serve with whipped topping.
