Recipe Ingredients for Pumpkin Cusard with Carmelized Pecans

1/3 cup Splenda no calorie sweetener
2 tbsp water
1 cup pecans, chopped
2 cups fat free milk
1/2 tsp cinnamon
1/4 tsp cardamom
1/4 tsp ground cloves
1/2 cup Splenda brown sugar
4 eggs
2 egg whites
2/3 cup canned pumpkin
1 tsp vanilla extract

Recipe Directions for Pumpkin Cusard with Carmelized Pecans

  1. Preheat oven to 350. Arrange 8 custard cups or ramikins ina roasting pan.

  2. Combine water and Splenda in pan and cook until mixture becomes thick. Stir in pecans to coat. Pour onto nonstick cookie sheet to cool. Break into pieces if needed and evenly distribute into custard cups or ramikins.

  3. Combine milk, cinnamon, cardamom, cloves in a saucepan and bring to a boil, stirring ocassionally, cook for 2 minutes. Whisk brown sugar, eggs, egg whites in a bowl. Stir in the milk mixture and pumpkin. Ladle into to custard cups or ramikins.

  4. Place the roasting pan in the oven and pour warm water around cups/ramikins until it is about 1/2 way up the sides. Bake for approximately 30 minutes or until a toothepick comes out clean. Remove from pan and refrigerate for 4 hours prior to serving.
