Recipe Ingredients for Pumpkin Curry Soup

4 tbsp butter
2 medium Onions
6 cloves garlic
1 tsp crushed red pepper
2 tsp curry powder
1 tsp ground coriander
45 oz of pumpkin
5 cups vegetable broth
2 1/2 cups soymilk
1/2 cup brown sugar

Recipe Directions for Pumpkin Curry Soup

  1. Melt butter, stir in chopped onions and chopped garlic. Cook until translucent.

  2. Add spices and stir for a few minutes more.

  3. Add pumpkin and broth, bring to a boil and then reduce heat and simmer for 10-15 minutes.

  4. Puree soup (either transfer small portions to blender or use a stick blender directly in the pot).

  5. Slowly add brown sugar, then soymilk. Top with soy sour cream and chives.
