This is a hearty and delicious dish that smells amazing and tastes divine. Why pumpkin and curry are not combined more often is beyond me! Pumpkin is a natural diuretic full of antioxidants, fiber, and iron. Curry powder is an anti-inflammatory agent and antioxidant. Put them together and you've got a very satisfying meal and leftovers for the week.

Recipe Ingredients for Pumpkin Curried Rice, Vegetarian

2 lbs organic canned pumpkin
3 tspn curry
3 tbls olive oil
2 cloves garlic, minced
1 small onion, diced
4 oz can green chilies, diced
2 cups organic brown rice
1 tsp salt
1/2 tsp pepper
3 cups water

Recipe Directions for Pumpkin Curried Rice, Vegetarian

  1. Saute onions and curry powder in olive oil for 3-5 minutes

  2. Add canned pumpkin, garlic, and green chilies, stirring in salt and pepper

  3. Cook for 15 minutes, stirring occasionally

  4. While pumpkin cooks, bring 3 cups water to a boil in another pot

  5. After pumpkin cooks for 15 minutes, add 2 cups brown rice

  6. Cook rice and pumpkin for about 3 minutes before adding boiling water to pumpkin mixture

  7. Bring pumpkin to a boil, then stir

  8. Put lid on pot and turn heat to low

  9. Cook for 30 minutes on low before lifting lid to check consistency

  10. Stir, and adjust seasoning to taste before serving
