Recipe Ingredients for pumpkin cupcakes

15 ounces pumpkin
1 cup brown sugar
1/2 cup white sugar
4 eggs
1/2 cup canola oil
2 cups white flour
1 tsp baking powder
1 tsp baking soda
1 tsp cinnamon
1 tsp ginger
1/2 tsp salt

Recipe Directions for pumpkin cupcakes

in a large bowl combine pumpkin, sugars, eggs, and oil until well blended. combine flour, baking powder, baking soda, cinnamon, ginger, and salt. gradually add to the pumpkin mixture. pour batter into muffin tins. bake at 350 for 17 mins. if you want to make into a cake. line a greased 15-in. by 10in by 1 in baking pan with waxed paper; grease the paper. bake the cake for 20- 25 mins or until the toothpick comes out clean.
