Not exactly diet friendly recipe, but they sure look good!!!

Recipe Ingredients for Pumpkin Cream Cheese Muffins

8 ounce cream cheese
1/4 cup white sugar
1 egg, beaten
1 3/4 cups all-purpose flour
1 1/2 cups white sugar
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 teaspoon salt
1/4 teaspoon ground nutmeg
1 cup pumpkin puree
1/2 cup unsweetened applesauce
1 egg, beaten
1/3 cup water
3 tbsp flour
3 tbsp sugar
2 tbsp celeb margarine

Recipe Directions for Pumpkin Cream Cheese Muffins

  1. Preheat oven to 350, line muffin tins with paper cups or grease. Set aside.

  2. Blend cream cheese, sugar and 1 egg. Set aside. Do not over-mix! Set aside.

  3. Combine four, sugar, baking soda, cinnamon, salt and nutmeg. Set aside.

  4. Mix pumpkin, applesauce, 1 egg and water. Set aside.

  5. Mix remaining ingredients to make a crumble.

  6. Pour 1/2 pumpkin batter in bottom of muffin cups, then cream cheese, then remaining pumpkin. Top with crumble.

  7. Bake 25-30 minutes.
