Recipe Ingredients for Pumpkin cranberry oatmeal cookies

1 cup pumpkin puree
3/4 cup brown sugar
1/4 cup molasses
2 egg whites
1 tbsp ground flax seed
3/4 cup all purpose flour
3/4 cup whole wheat flour
1 tsp baking soda
1 tsp cinnamon
1/2 tsp nutmeg
1/2 tsp cloves
3 cups oats
1/2 cup dried cranberries

Recipe Directions for Pumpkin cranberry oatmeal cookies

Preheat oven to 350 degrees Fahrenheit. Line two cookie sheets with parchment paper. Mix ground flax seeds with water and let sit five minutes. Mix pumpkin and sugar, beat in egg whites and flax. Mix together flour, baking soda, spices and oats. Add wet ingredients to dry and stir just to combine. Fold in cranberries. Drop by tablespoonfulls onto baking sheets. Bake 10-20 minutes, alternating position of sheets midway through.
