Recipe Ingredients for Pumpkin cranberry muffins

1 cup pumpkin puree
2 whole eggs
2 egg whites
1 tsp baking powder
1 1/4 cups whole wheat flour
1/2 cup oatmeal
1 cup cranberries

Recipe Directions for Pumpkin cranberry muffins

  1. in small bowl, lightly whisk eggs, then add a pinch of salt. Mix in pumkin puree.

  2. in large mixing bowl, mix together flour, oatmeal, baking powder.

  3. make a well in center of flour mixture and our in pumpkin-egg mixture.

  4. add cranberries and mix just until combined (may need to thin with a little water).

  5. Bake at 350 for 20 - 30 minutes.
