Recipe Ingredients for Pumpkin Cranberry Bread

2 c. flour
1 c. whole wheat flour
5 1/2 t. pumpkin pie spice
1/4 t. cinnamon (optional)
2 t. baking soda
1 1/2 t. salt
2 1/2 c. granulated sugar
15 oz. can pumpkin
4 large eggs
1 c. canola oil
1/2 c. unsweetened orange juice
1 1/2 c. cranberries
1 c. chopped walnuts (optional)

Recipe Directions for Pumpkin Cranberry Bread

  1. Preheat oven to 350 degrees. Grease and flour 2-9x5 loaf pans.

  2. In large mixing bowl add sugar, pumpkin, eggs, oil, and juice. Beat just until blended.

  3. In another large bowl mix flour, pumpkin pie spice, cinnamon, soda, and salt. Whisk dry ingredients together then add to the pumpkin mixture. Stir just until moistened.

  4. Gently fold in cranberries and spoon batter into prepared loaf pans.

  5. Bake for 60-65 minutes or until wooden toothpick comes out clean. Let cool for 10 minutes in the pan, then remove to finish cooling on wire racks.
