These are "cakey" cookies that contain no white flour or white sugar.

Recipe Ingredients for Pumpkin Cran-Walnut Cookies

2 1/2 c whole wheat pastry flour, sifted
1 T baking powder
1/2 t salt
1 t cinnamon
1/2 t pumpkin pie spice
1/2 c butter
1 1/4 c Sucanat
2 eggs
28 oz canned pumpkin
1 c chopped walnuts
1 c dried cranberries
1 1/2 c quick oats

Recipe Directions for Pumpkin Cran-Walnut Cookies

  1. Preheat oven to 400 degrees.

  2. Mix dry ingredients together well, except walnuts, chips and oats.

  3. Cream softened butter and Sucanat well. Add one egg at a time, blending well after each one. It takes a long time but Sucanat will eventually melt. Blend in pumpkin well. Add to dry ingredients, mixing well. Stir in walnuts, cranberries and oats.

  4. Drop by tablespoons onto greased cookies sheets and bake for 12-15 minutes or until lightly browned on bottom. Cool on rack.
