Whole wheat bran muffins with pureed pumpkin and craisins

Recipe Ingredients for Pumpkin Craisin Bran Muffins

2 cups natural bran
2 1/2 cups whole wheat flour
1 cup craisins
1/2 cup ground flax seeds
1/4 cup wheat germ
2 1/2 tsp. Baking soda
1/2 tsp salt
2 1/2 tsp. Pumpkin pie spice
2 eggs, lightly beaten
2 cups skim milk
1 1/2 cups brown sugar
1 1/4 cup pumpkin
1/4 cup canola oil

Recipe Directions for Pumpkin Craisin Bran Muffins

  1. Mix dry ingredients in one bowl.

  2. Mix wet ingredients in another bowl.

  3. Mix together until just combined.

  4. Place 1/3 cup batter in in each line muffin cup.

  5. Bake at 400 degrees for 18-20 minutes.
