Tasty cornmeal muffins! Pumpkin is a subtle addition. Good variation on cornmeal muffins.

Recipe Ingredients for Pumpkin Cornmeal Muffins

1/4 cup vegetable oil
1/3 cup light brown sugar
1/2 cup milk
2 eggs
1 cup canned pumpkin
1/2 cup whole-wheat flour
1/2 cup flour
1 cup yellow cornmeal
1 tbs baking powder
1 tsp ground cinnamon
1/2 tsp salt
1/4 tsp ground cloves
1/2 tsp ground ginger

Recipe Directions for Pumpkin Cornmeal Muffins

  1. Heat oven to 400 F. Lightly coat 12-cup muffin pan with vegetable cooking spray.

  2. Whisk together dry ingredients (flours, corn meal, brown sugar, salt, baking powder, cinnamon, ginger and cloves) in a large bowl. Use your hands to break up the brown sugar if necessary.

  3. In another bowl, whisk the eggs briefly. Whisk in the oil, then the pumpkin, and finally the milk.

  4. Using a rubber spatula, stir the wet ingredients into the dry ingredients just until they are blended together.

  5. Spoon the batter into the muffin pan. Bake about 20 minutes or until a toothpick inserted into a muffin comes out clean. Remove from pan and cool on a wire rack.

  6. Servings: 12

  7. Can be doubled.
