Recipe Ingredients for pumpkin corn bread

1 1/2 cups cornmeal
1/4 cup flour
3/4 cup whole wheat flour
1 tbsp baking powder
1 tsp baking soda
1/2 tsp salt
3 tbsp brown sugar
2 tbsp honey
1 cup pumpkin
2/3 cup rice milk
2 tbsp flax seed, ground
2 tbsp olive oil
2 tbsp canola oil
1 tsp cinnamon
1/2 tsp nutmeg
1/4 tsp cloves

Recipe Directions for pumpkin corn bread

  1. Mix all dry ingredients well.

  2. Simmer flax seed with water for a few minutes to make a gel. Add all wet ingredients to the flax gel once it cools a bit. Then fold in the wet mixture to the dry until just blended.

  3. Place in greased loaf pan.

  4. Bake at around 375 or 350 for about 45 or 50 minutes.
