Mod of my gram's pumpkin cookie recipe using some whole wheat flour and splenda to replace half of the sugar.

Recipe Ingredients for Pumpkin Cookies (Whole Wheat)

170 grams all purpose flour
100 grams whole wheat flour
1 egg
1/2 cup sugar
1 tablespoon maple syrup
1 cup pumpkin puree
1/2 cup vegetable shortening
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt

Recipe Directions for Pumpkin Cookies (Whole Wheat)

  1. Cream together egg, sugar, syrup, shortening and pumpkin.

  2. Sift together flour and leavening agents, and 1 teaspoon pumpkin pie spice (or cinnamon).

  3. Slowly add flour mixture to the liquids while beating in an electric mixer.

  4. Bake at 350 F for 11-13 minutes.
