Healthy Pumpkin Cookies w/flax & coconut.

Recipe Ingredients for Pumpkin Cookies

8 ounces Pumpkin puree
1 cup flour
1 cup wheat flour
1 tsp kosher salt
1 tsp baking soda
1 tsp Cinnamon
1 tsp nutmeg
1 tsp allspice
4 tbs coconut flakes
1 egg
3 tbs egg whites
8 tbs extra virgin olive oil
1 tbs Forti-Flax Ground Flax Seed
1/4 cup sugar
1/4 cup honey
1/4 cup brown sugar

Recipe Directions for Pumpkin Cookies

  1. Set oven to 375 degrees. Mix all dry ingredients in a medium bowl, then mix all wet ingredients in a separate bowl, add wet to dry and mix until well blended. Using a small spoon, drop on the prepared baking sheet ( parchment paper recommended) and bake for 8-14 minutes (depending on the size of the cookies).

  2. Cool on rack then serve or place in container for later use.
