What to do with leftover pumpkin puree from Thanksgiving...make cookies! Moist pumpkin cookies with raisins and coconut, great for a morning snack.

Recipe Ingredients for Pumpkin Cookies

2 cups all purpose flour
1 cup whole wheat flour
1 tsp baking powder
1/2 tsp salt
1 cup (2 sticks) unsalted butter, softened
1 cup pumpkin puree
1 cup granulated sugar
1 cup brown sugar
1 tsp cinnamon
1 tsp nutmeg
1/2 tsp ginger
1/4 tsp clove
1/2 tsp vanilla
2 eggs
2 cups (not packed) raisin
1 cup unsweetened coconut

Recipe Directions for Pumpkin Cookies

  1. Preheat oven to 375 degrees.

  2. In a small bowl, mix flour, baking powder and salt. Set a aside.

  3. In a large mixing bowl using an electric mixer, cream butter, pumpkin puree, and sugars.

  4. Add spices, vanilla and 1 egg at a time to mixture.

  5. Add dry ingredients to wet ingredients slowly.

  6. Fold in raisins and coconut.

  7. Using a tablespoon and spatula, scoop batter onto parchment paper lined cookie trays with about 1 inch between each cookie.

  8. Bake for 15 to 17 minutes. Cool on wire racks.
