These cookies came from a recipe from a friend. I tweaked them a bit to make them a bit more diet friendly.

Recipe Ingredients for Pumpkin cookies

3/4 cup all purpose flour
1/4 cup whole wheat flour
1/2 cup old fashioned oats
1/2 teaspoon baking soda
1/4 teaspoon salt
1 teaspoon cinnamon
1 tsp pumpkin pie spice
1/4 cup ground flax seed
1/4 cup applesauce
1/2 cup brown sugar
1/4 cup white sugar
1 egg
1/2 teaspoon vanilla extract
1/2 cup canned pure pumpkin
1/4 cup raisins

Recipe Directions for Pumpkin cookies

  1. Preheat oven to 350. Combine flour, oats, baking soda, spices and salt. Set aside.

  2. In large bowl cream together the flax, applesauce, and sugars until smooth.

  3. Beat in egg and vanilla.

  4. Stir in pumpkin and gradually add dry ingredients.

  5. Drop by round spoonfulls on ungreased cookie sheets. Bake for 12-15 min.
