Soft, flavorful cookies. Sort of like eating mini pumpkin bread pieces

Recipe Ingredients for Pumpkin Cookies

1 cup sugar
1/4 cup butter
1/4 cup shortening
1 egg
2 cups flour
1/8 tsp salt
1 tsp baking powder
1 tsp baking soda
1 tsp cinnamon
1 cup pumpkin
1 cup raisins

Recipe Directions for Pumpkin Cookies

  1. Use canned or cooked mashed pumpkin pulp.

  2. Reconstitute the raisins by soaking a few minutes in a cup of hot water, then drain off the excess water before adding to the cookie dough.

  3. Combine the sugar butter, shortening& egg.

  4. Add in the pumpkin and blend.

  5. Add the dry ingredients

  6. Fold in the raisins. (can add 1/2 cup of nuts if you'd like)

  7. Drop by tablespoon onto greased cookie sheet

  8. Dust lightly with sugar

  9. Bake at 350 for 10 to 12 minutes

  10. Let sit on the cookie sheet for a few minutes before removing.
