A delicious autumn treat for all of your Halloweens and Thanksgivings. For a little extra treat, top with Penuche Frosting.

Recipe Ingredients for Pumpkin Cookies

1/2 cup Sugar
1/2 cup Brown Sugar, firmly packed
1 cup Butter or Margarine, softened
1 cup Canned Pumpkin
1 tsp Vanilla
1 Egg
2 cups All-Purpose Flour
1 tsp Baking Powder
1 tsp Baking Soda
1 tsp Cinnamon
1/4 tsp Salt
3/4 cup Chopped Nuts

Recipe Directions for Pumpkin Cookies

  1. Heat oven to 350 degrees F. In a large bowl, combine sugar, brown sugar, and butter. Beat until light and fluffy.

  2. Add pumpkin, vanilla, and egg. Blend well.

  3. Add flour, baking powder, baking soda, cinnamon, and salt. Mix well.

  4. Stir in nuts.

  5. Drop by rounded teaspoonfuls 2 inches apart onto ungreased cookie sheets.

  6. Bake for 10-12 minutes or until light golden brown around the edges. Immediately remove from cookie sheets. Cool for 15 minutes.
