Recipe Ingredients for Pumpkin Cookies -GF-CF-EF

1/2 cup white sugar
1/2 cup brown sugar
6 oz peanut oil
7 7/10 oz pumpkin
1 tsp vanilla
1/2 tsp rice vinegar
2 cups flour
1 tsp cinnamon
1 tsp baking soda
3/4 tsp salt
1 egg
1 Raisins, optional

Recipe Directions for Pumpkin Cookies -GF-CF-EF

  1. Cream sugars and oil.

  2. Beat all wet ingredients together, well.

  3. Use Jan Hammer's Favorite GF flour mix.

  4. May use egg replacement in dry ingredients.

  5. Mix dry ingredients, separately, first.

  6. Stir all together, just until moist and smooth.

  7. Drop by spoonfuls on ungreased cookie sheet.

  8. Or form dough inside pumpkin shape cutter, 1/4 " thick.

  9. Use raisins for jack-o-lantern faces

  10. Bake 10 to 15 minutes at 350 degrees.
