Recipe Ingredients for Pumpkin Cinnamon Muffins

1 3/4 cups all-purpose flour
1 1/2 cups whole wheat flour
2 tablespoons baking powder
1 teaspoon salt
2 teaspoon cinnamon
1 tablespoon pumpkin pie spice
1 cup white sugar
3/4 cup brown sugar
8 oz cream cheese, softened
2 tablespoon golden flax meal
2 eggs
2 1/2 cups pumpkin puree

Streusel Topping:
6 tablespoons all-purpose flour
3 tablespoons white sugar
3 tablespoons brown sugar
3/4 teaspoon ground cinnamon
4 tablespoons ICBINB
3 tablespoons chopped pecans

Recipe Directions for Pumpkin Cinnamon Muffins

  1. Preheat oven to 350 F.

  2. Measure out and mix first four ingredients in a large bowl. Line or grease 2 muffin pans.

  3. Mix 2 tablespoons of golden flax seed meal with 6 T. of water, set aside for about 10 minutes to create an egg replacement.

  4. Cream the cream cheese with the sugar, mix well to get rid of most of the lumps. Add the eggs, flaxseed-water mixture, and pumpkin puree.

  5. Add the flour mixture to the wet mixture. Mix by hand until just incorporated, but DO NOT OVERMIX!

  6. Pour the batter into the prepared muffin pans, about two-thirds full. Bake for 18-22 minutes, until a toothpick inserted in the middle comes out clean.
