1/4 teaspoon baking soda
4 tablespoons SPLENDA Sugar Blend for Baking
0.46 cup all-purpose flour
1/8 teaspoon salt
1/4 cup unsweetened cocoa powder
1/4 cup boiling water
1/3 cup pumpkin
1/4 cup egg substitute
1 teaspoon vanilla extract
1 1/2 teaspoons pumpkin pie spice

Recipe Directions for Pumpkin Chocolate Cupcakes

  1. Directions

  2. Preheat oven to 350 degrees F.

  4. Line an 8-inch cake pan with a circle of parchment paper cut to fit the bottom of the pan. Set pan aside.

  5. In a large bowl, mix baking soda, sugar, flour, and salt. Dissolve cocoa powder in hot water and then add to dry ingredients. Stir in applesauce, egg substitute, and vanilla. Pour batter into prepared pan. Bake for 35 minutes. Cool cake completely on a cooling rack before frosting with chocolate frosting.

  7. 8 ounces light cream cheese

  8. 1 tablespoon light butter

  9. 2 cups sugar substitute (recommended: Splenda)

  10. 1/2 cup unsweetened cocoa powder

  11. 1/8 teaspoon salt

  12. 1 teaspoon vanilla extract

  13. 3 tablespoons skim milk

  14. In the bowl of an electric mixer, beat the cream cheese and butter together until smooth. Add sugar substitute and beat until incorporated. Add cocoa powder, salt, and vanilla and beat until blended. If the frosting is too thick to spread, add the milk, 1 tablespoon at a time, with the mixer on low, until spreading consistency is achieved.
