1 c pumpkin, canned
1/2 c liquid egg whites
3/4 c soy milk
1/4 c sugar
3/4 c whole wheat flour
3/4 c soy flour
1 1/2 oz soy protein powder (1 1/2 scoops)
3/4 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1 tsp pumpkin pie spice
1/3 c chocolate chips

Recipe Directions for Pumpkin Chocolate Chip Protein Muffin

  1. preheat oven to 350

  2. grease large muffin pan

  3. mix together wet ingredients

  4. add sugar

  5. add dry ingredients

  6. pour into 6 large muffin tins

  7. top each one with chocolate chips

  8. bake for 18-20 mins
