Recipe Ingredients for Pumpkin Chocolate Chip Muffins

1 1/4 c flour
2/3 c sugar
1 tbsp baking powder
1 tsp salt
1 tsp cinnamon
1/2 cup semisweet chocolate chips
1/4 cup egg beaters
1 tbsp egg beaters
1/2 cup fat free milk
1/4 cup applesauce
1/2 cup pumpkin puree
1 1/2 tsp vanilla

Recipe Directions for Pumpkin Chocolate Chip Muffins

  1. Preheat oven to 350, spray muffin pans w/ nonstick spray

  2. In large bowl, mix flour, sugar, baking powder, cinnamon & salt.

  3. In seperate bowl, mix eggs, milk, pumpkin, applesauce, & vanilla. Add to dry ingredients and mix until moistened. Fold in chocolate chips.

  4. Fill cups 2/3 full and bake @ 350 for approx 25-30 min until toothpick comes out clean
