A delicious (though not quite the healthiest) pumpkin loaf. I want to experiment with the recipe and try and make it healthier.

Recipe Ingredients for Pumpkin Chocolate chip loaf

3 c. granulated sugar
1/2 c. canola oil
1/2 c. applesauce (unsweetened)
3 Egg, Whole
16 oz solid pack pumpkin
3 c. all purpose flour
1 t. ground cloves
1 t. ground cinnamon
1 t. ground nutmeg
1 t. baking soda
1/2 t. salt
1/2 t. baking powder
1 c. Mini Chips

Recipe Directions for Pumpkin Chocolate chip loaf

  1. Heat oven to 350F and grease 2 9x5x3″ loaf pans or 4-5 mini loaf pans

  2. In a large bowl, stir sugar, oil, and applesauce until combined

  3. Beat in eggs and pumpkin

  4. In separate medium bowl, whisk all dry ingredients

  5. In two additions, add the dry ingredients to the wet; do not over-mix

  6. Fold in the chocolate chips

  7. Divide batter into prepared pans and bake until wooden tester comes out clean (about 70 min for large loaves or 45-50 min for small loaves)

  8. Let cool 10 min then loosen the edges with a knife before removing from pans and cooling completely
