Recipe Ingredients for Pumpkin Chocolate Chip Cookies

6 cups flour, all purpose
1 tsp baking soda
2 tsps baking powder
1 tsp salt
1 1/3 cup butter
2 cups sugar
3 eggs
2 tsps vanilla
1 cup pumpkin, fresh or canned
12 ounces semi sweet chocolate chips
1 cup walnuts, chopped

Recipe Directions for Pumpkin Chocolate Chip Cookies

  1. Preheat oven to 375 degrees.

  2. In a large bowl, mix the flour, baking soda, baking powder and salt.

  3. In a medium bowl combine shortening and sugar. Beat in eggs and vanilla until well blended. Add pumpkin and mix well.

  4. Combine wet and dry ingredients and mix well. Stir in chocolate chips and nuts and mix again.

  5. Drop by heaping tablespoonfuls onto greased cookie sheet (or use parchment paper) about 2 inches apart and flatten slightly.

  6. Bake 10 to 12 minutes; do not brown. Cool on racks. Makes about six dozen cookies.
