This luscious cake is flavorful and chock full of nuts, raisins and chocolate chips.

Recipe Ingredients for Pumpkin Chocolate Chip Cake

1 c egg beaters
1 c In the Raw Zero Calorie Sweetener
1 c sugar
1/2 c 50/50 Butter Blend
1/2 c butter (melted)
16 oz. can solid-pack pumpkin (not pumpkin pie filling)
1 cup all purpose flour
1 cup whole wheat flour
2 teaspoons baking powder
1 teaspoon baking soda
1 1/2 teaspoons cinnamon
1/2 teaspoon ground cloves
1/4 teaspoon nutmeg
1/4 teaspoon ginger
1/4 teaspoon salt
2 cups bran cereal (such as All-Bran)
6 ounce semisweet chocolate chips
2/3 cup Chopped Walnuts
2/3 cup raisins
2 tbs powdered sugar (optional)

Recipe Directions for Pumpkin Chocolate Chip Cake

  1. Preheat oven to 350 degrees.

  2. Grease and flour a tube pan.

  3. In a large bowl, beat the eggs.

  4. Gradually beat in the sugar until the mixture is thick and pale yellow.

  5. Beat in the melted butter, then the pumpkin.

  6. In another bowl, stir together the flour, whole wheat flour, baking powder, baking soda, cinnamon, cloves, nutmeg, ginger, salt and the cereal.

  7. Add to the pumpkin mixture, stirring until the dry ingredients are incorporated.

  8. Stir in the chocolate, walnuts and raisins.

  9. Turn the batter out into the prepared pan.

  10. Bake the cake for 1 hour 10 minutes or until a toothpick inserted in the highest part of the cake comes out clean.

  11. Transfer the pan to a rack to cool.

  12. If desired, dust with powdered sugar.

  13. Serves 16 to 20.
