Awesome cookies!! You can cook a bit longer to have more firm centers. alternative: make smaller cookies (5 dozen) @ approx 80 calories per cookie. I prefer smaller cookies

Recipe Ingredients for Pumpkin Chip drop cookies

1 cup butter
1 cup sugar
1 egg
1 tsp vanilla extract
2 cup all purpose flour
1 cup quick cooking oats
1 tsp baking soda
1 tsp ground cinnamon
1/2 tsp salt
1 cup canned pumpkinb
1 cup semi-sweet chocolate chips

Recipe Directions for Pumpkin Chip drop cookies

  1. In mixing bowl, cream butter and sugar

  2. Beat in egg & vanilla

  3. Combine flour, oats, baking soda, cinnamon & salt

  4. Add to creamed mixture alternating with pumpkin

  5. 350 approx. 12 minutes (4 dozen)

  6. Do not beat mixture or let butter get too warm, it makes flat flimsy cookies.
