low fat, 100 calorie muffins that have the vitamin nutrition of nuts and spices with the pumpkin zest flavor of a traditional fall treat.

Recipe Ingredients for pumpkin chia seed muffins

1 1/2 cups whole wheat flour
2 tsp. baking powder
1/2 tsp. nutmeg
3 tsp. cinnamon
1 tsp. vanilla extract
2 eggs
1/2 cup applesauce
1/2 cup Agave Nectar
1/2 tsp. salt
15 oz. can pumpkin
1 tbsp Chia Seed
1/4 cup slivered almonds

Recipe Directions for pumpkin chia seed muffins

  1. Grease about 18 baking cups, but you may not have enough batter to fill all 18. Mine came out with 17. Preheat oven to 350 degrees.

  2. Mix dry ingredients (leave out almonds all together) and wet ingredients separately. When ready to combine, use mixer. Pour into baking cups.

  3. For almonds - leave out until the end. use to top the muffins just before baking.

  4. Bake at 350 degrees for 25-30 mins or until toothpick comes out clean.
