Low fat version of a great cheesecake

Recipe Ingredients for Pumpkin Cheesecake

24 ounce low fat cream cheese
3/4 cup sugar
3 eggs
15 ounce can pumpkin
1 teaspoon vanilla
2 teaspoon cinnamon
1 1/2 cup crushed graham crackers
3 tablespoons sugar
3 tablespoons butter or Smart Balance Blend

Recipe Directions for Pumpkin Cheesecake

  1. Preheat oven to 350 degrees

  2. Lightly butter 9 inch springform pan.

  3. Place on round baking sheet.

  4. Blend crushed graham crackers, sugar and melted butter.

  5. Press in the bottom of the springform pan. Set aside.

  6. Blend softened cream cheese and sugar.

  7. Add eggs one at a time, just until blended.

  8. Stir in pumpkin, vanilla and cinnamon.

  9. Pour in prepared pan.

  10. Bake 70 minutes or until top slightly cracks and

  11. toothpick comes out clean.

  12. Cool for one hour.

  13. Use knife to loosen from side of pan, release springform.

  14. Refrigerate at least 4 hours before serving.

  15. Approximately 12 servings
