Recipe Ingredients for Pumpkin CheeseCake

12 oz graham cracker crumbs (1 1/2 cups)
1 1/2 tbsp splenda
6 tbsp I Can't Believe It's Not Butter®Light , melted
16 ounce Neufchatel cheese
3/4 cups splenda
15 ounce pumpkin (1 can)
1 1/4 tsp ground cinnamon
1/2 tsp ground ginger
1/2 tsp ground nutmeg
1/4 tsp salt
2 eggs
2 cups fat free sour cream
2 tbsp splenda
1 tsp vanilla extract
1/4 cup pecan pieces

Recipe Directions for Pumpkin CheeseCake

  1. Combine first 3 ingredients. Press into bottom of a 9-inch springform pan; chill

  2. For filling, beat neufchatel cheese and 3/4 cups splenda in a large mixing bowl until well blended. Beat in pumpkin, spices and salt. Add eggs one at a time, beating well after each. Pour into crust. Bake at 350 degrees F for 50 minutes.

  3. Meanwhile, for topping, combine sourcream, 2 tbsp splenda and vanilla. Spread over filling; return to the oven for 5 minutes. Cool on rack; chill overnight. Sprinkle pecans over top.
