A layered pumpkin cheesecaked cupcake with a graham cracker crust

Recipe Ingredients for Pumpkin Cheesecake Cups

1 tbsp butter
2/3 cup Graham cracker
1 tbsp vanilla extract
1 cup low-fat cottage cheese
6 tbsp splenda no calorie
8 oz Cream Cheese Fat Free
1 cup egg beaters
2 cups Fat Free Ricotta Cheese
15 oz pumpkin puree
1/2 cup maple syrup
5 tbsp splenda no calorie
1 tsp pumpkin pie spice
1 tsp vanilla extract

Recipe Directions for Pumpkin Cheesecake Cups

  1. Crust Instructions

  2. Melt butter in microwave 30s-1min

  3. Grind up Graham cracker in a blender or pulverization method of your choice.

  4. Combine and mix graham cracker with butter use a fork till all the cracker is moistened

  5. Spoon mixture into cupcake tins lined with foil&paper cupcake cups

  6. Cheesecake Instructions

  7. Blend cottage cheese till smooth

  8. Add 6 tbsp splenda and 1 tbsp vanilla extract to cottage cheese, blend

  9. Add cream cheese softened to room temperature blend till smooth

  10. Add egg blend till smooth

  11. Pour into cupcake tins prepared with graham crust

  12. Preheat oven to 350F, bake for 16 minutes

  13. When done baking remove from oven and add pumpkin mixture to top of cheesecake

  14. Pumpkin Instructions

  15. Combine ricotta, pumpkin, maple syrup, splenda, pumpkin spice and vanilla extract

  16. Mix well and add to baked cheesecake cupcakes. You may need to smooth with a spoon to get it level, you may want to place pumpkin mixture into a pipe bag to make it easier to get into the cheesecake cupcakes.

  17. Preheat oven to 350F, bake 20mins. Toothpick should come out clean.

  18. Allow to stand for 20 mins.

  19. Refrigerate for 2 hrs
