Pumpkin soup with carrot & fresh ginger

Recipe Ingredients for Pumpkin & Carrot Gingery Soup

1 kg pumpkin
3 large carrots
3 small onions
3 garlic cloves
1 tbsp fresh ginger
5 cups beef stock
3 cups chicken stock
1 tbsp olive oil

Recipe Directions for Pumpkin & Carrot Gingery Soup

  1. Steam the pumpkin & carrot

  2. fry the onion, garlic & ginger in olive oil

  3. add the stock

  4. add carrots

  5. add most of the pumpkin

  6. chop up remaining pumpkin into tiny cubes

  7. blend soup

  8. add remaining pumpkin

  9. reduce until desired consistancy

  10. add salt & pepper to taste
