Recipe Ingredients for Pumpkin Carrot Cake Bars

2 cup Pumpkin
2 cup Wheat Flour, Whole-grain
1 cup, chopped Carrots
60 packet No Calorie Sweetener
3 tsp Pumpkin Pie Spice
8 oz Cream Cheese Light
12 tsp No Calorie Sweetener
1 tsp Leavening Agents, Baking Soda
1 Teaspoon Baking Powder
1 tsp Salt, Table
1 tsp Cinnamon, Ground
1 cup Original
0.25 cup Original
1 cup Apple Sauce Unsweetened Organics

Recipe Directions for Pumpkin Carrot Cake Bars

  1. Preheat oven to 350 and grease 10" x 15" pan

  2. Whisk flour, salt, baking soda, baking powder, cinnamon, and pumpkin pie spice in large bowl

  3. Beat 1 cup egg beaters. Then mix in 1 1/4 cup sweetener, apple sauce, beans, and pumpkin puree until smooth.

  4. Add carrots (crushed or shredded).

  5. Fold dry ingredients into the wet.

  6. Pour batter into greased pan.

  7. In another bowl, beat cream cheese, 1/4 cup sweetener, 1/4 cup egg beaters.

  8. Drop dollops of cream cheese mix into batter and swirl with knife.

  9. Bake 25-30 minutes.
