A great way to use up squash, fresh pumpkin or canned pumpkin is also fine. Lower in fat b/c substituted 3/4c of the oil (called for 1 1/2c in the original recipe) with 3/4c of unsweetened applesauce.

Recipe Ingredients for Pumpkin cake

1 cup egg beaters
1 3/4 cup sugar
3/4 cup canola oil
1 cup all purpose flour
2 cups White Whole Wheat Flour
2 cups pumpkin
9/10 cup Natural Applesauce

Recipe Directions for Pumpkin cake

  1. Beat egg beaters, sugar and oil.

  2. Add flour, 2 tsp baking powder, 2 tsp baking powder, 1 tsp salt and 2.5 tsp pumpkin spices alternating with pumpkin and applesauce. Bake in ungreased bundt pan at 350deg for 55-60 mins.
