Recipe Ingredients for Pumpkin Butter Cupcakes

2 1/4 cups all purpose flour
1 tbsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1/2 tsp cinnamon
1/2 tsp ginger
1/2 tsp nutmeg
1/2 cup butter
1 1/3 cup sugar
2 eggs
1 cup pumpkin
3/4 cup Milk, Reduced Fat, Fluid, 2% Milkfat
3/4 cup walnuts

Recipe Directions for Pumpkin Butter Cupcakes

  1. In medium bowl stir together flour, Watkins baking powder, baking soda, salt, Watkins ground cinnamon, Watkins Ginger, and Watkins Nutmeg. In large bowl cream together butter and sugar until light and fluffy; beat in eggs. Blend in Watkins Pumpkin Butter. Stir in dry ingredients and milk, blending until batter is smooth. Stir in chopped walnuts. Spoon (I use an ice cream scooper) batter into paper lined muffin tins. Fill about 2/3 full. Bake at 375 for 18 to 22 minutes. Makes 16 cupcakes, but I made 22 the first time.

  3. In a 2 quart saucepan melt 1/4 cup butter over medium heat. Add 6 tbsp brown sugar and 6 tbsp half and half. Continue cooking, stirring occationally, until mixture comes to a boil ( 2 to 3 minutes). Remove from heat and add 2 cups powdered sugar and 1 tsp Watkins Original Double Strenght Vanilla; beat until well mixed (1 to 2 minutes). Let cool to spreading consistency. Frost
