I was pumped to make baked buckwheat again, but wanted to try something different.  Enter, the pumpkin banana baked buckwheat muffin. This was a lot more moist than the previous version because I used banana + pumpkin.  It was much softer and not as to-go friendly.  This was more similar to a texture of a very thick banana scramble.

Recipe Ingredients for Pumpkin Buckwheat Bake

0.13 cup Whole Milk
1/4 cup Buckwheat Flour
0.5 cup Pumpkin
1 large Egg, White
1 tbsp Chia Seed
2 tbsp Almond Butter, Plain
1 tbsp Molasses, Blackstrap

Recipe Directions for Pumpkin Buckwheat Bake

  1. 1/4c ground buckwheat groats [untoasted]

  2. 1T whole buckwheat groats

  3. 1/2-1t cinnamon

  4. 1/4t ginger

  5. sprinkle of all spice/nutmeg/clove

  6. 1/2T vanilla

  7. 1/4c pumpkin puree

  8. 1/2 banana

  9. 1/4t baking powder

  10. 1 flax egg [1T ground flax meal + 2.5T warm water, whisked] or 1 large egg

  11. 1T chia seeds

  12. 2T chopped almonds [optional]

  13. 2T almond milk

  14. Preheat oven to 350*

  15. Whisk flax egg together and set aside for ~3-5min.

  16. In a small bowl mash banana until egg-like.

  17. Mix in almond milk, pumpkin, + vanilla with a fork.

  18. Mix in buckwheat, buckwheat groats, spices, baking powder, chia seeds, and almonds.

  19. Mix in flax egg.

  20. Lightly grease a small oven-safe dish, add mixture, smooth, and bake for 30-35 minutes. [I used a personal size soup crock ~2? deep by 5? diameter]

  21. *You can use 1 flax egg or sub 1 white or 1 chia seed egg.
