Yummy breakfast substitution. REQUIRES skim milk, oats, baking powder, egg whites, canned pumpkin, protein powder, milled flax seed

Recipe Ingredients for Pumpkin Breakfast Bars

2 cups oats
3 tsp. baking powder
1 tsp. salt
2 cups fat free milk
1 cup egg whites
1 cup pumpkin
2 tsp. vanilla extract
3 tsp. pumpkin pie spice
1 scoop whey protein powder
16 tbsp milled flax seed

Recipe Directions for Pumpkin Breakfast Bars

Preheat the oven to 325. Combine all dry ingredients and then mix in the wet ingredients. Mix it all up. Pour into a square glass baking dish that has been sprayed well on sides and bottom. Bake for about 45 minutes. When you stick a toothpick in the middle of the dish after baking, the toothpick should come out clean. If it doesn't, bake it for a little bit longer. Makes 8 servings (squares).
