Spicy Bread with white chocolate, cream cheese glaze

Recipe Ingredients for Pumpkin Bread, Skookum Style

1/2 cup wheat flour (graham)
1/2 cup all purpose flour
1/2 cup rolled oats
1 tsp baking soda
1/4 tsp baking powder
1 cup pumpkin puree
246 grams applesauce
150 grams egg whites
1 tbsp cinnamon
1/2 tbsp ginger
1 tsp nutmeg
1/2 tbsp vanilla extract
7 grams white chocolate (optional)
20 grams cream cheese (optional)

Recipe Directions for Pumpkin Bread, Skookum Style

  1. Preheat oven to 350 degrees Fahrenheit

  2. Grease and Flour a loaf pan, set aside

  3. Stir together flours, oats, baking soda and powder, cinnamon, ginger, nutmeg and cloves in one bowl

  4. In a separate bowl; Whip the egg whites until thickened then blend in vanilla, molasses, pumpkin and applesauce

  5. Slowly pour, while stirring, dry ingredients into wet ingredients. Mix it in well.

  6. Pour the batter into the greased/floured loaf pan

  7. Bake at 350 for 45 min (or 70 minutes for larger pans)

  8. Bread is done baking when a knife is inserted in the center of the loaf and it comes out clean.

  9. After the bread cools, pop it out of the pan and set upright on a flat service.

  10. Melt white chocolate squares and mix into whipped cream cheese. Using a spoon, drizzle a light amount across the top of the baked bread.

  11. Outside should have a nice crust and the center should be moist.

  12. I cut the loaf in 9 sections, then again lengthwise. Great this way for parties with a lot of food, or as a small, simple snack for around the house.
