Recipe Ingredients for Pumpkin Bread

3 1/2 cups whole wheat pastry flour
2 teaspoons baking soda
1 teaspoon baking powder
1 1/2 teaspoons ground cinnamon
1 teaspoon ground nutmeg
1/2 teaspoon ground cloves
1/2 teaspoon ground ginger
3/4 teaspoon salt
2 cups brown sugar
6 tablespoons Organic Flax Seed Meal
1/3 cup unsweetened applesauce
1/2 cup olive oil
4 eggs
15 oz. pumpkin puree
1/2 cup water

Recipe Directions for Pumpkin Bread

  1. Preheat oven to 350 degrees. Grease two 9x5 loaf pans.

  2. In large bowl, whisk together whole wheat pastry flour, baking soda, baking powder, spices, salt, brown sugar and flax meal.

  3. In another bowl, combine applesauce, oil, eggs, and pumpkin puree.

  4. Add pumpkin mixture to flour mixture and stir just until combined.

  5. Pour into the prepared loaf pans.

  6. Bake at 350 degrees for 60 to 70 minutes, or until a toothpick inserted in center comes out clean.

  7. Note: 1 cup of coarsely chopped walnuts can be added, but don't forget to add the calories to your tally.
