This is the Joy of Cooking's recipe for pumpkin bread but with half the butter. I've found that you do not need the extra butter for moistness in this bread as canned pumpkin is already moist. Also instead of using water, use milk-it gives it a better flavour.

Recipe Ingredients for Pumpkin Bread

1 cup cooked or canned pumpkin puree
1 1/2 cups all-purpose flour
1 teaspoon baking soda
1/4 teaspoon baking powder
1 teaspoon salt
2 teaspoons ground cinnamon
1 teaspoon ground ginger
1/2 teaspoon grated or ground nutmeg
1/4 teaspoon ground cloves
1/3 cup milk
1/2 teaspoon vanilla
3 tablespoons butter, softened
1 cup sugar
1/3 cup packed brown sugar
2 large eggs

Recipe Directions for Pumpkin Bread

  1. Preheat the oven to 351 degrees F. Grease a 9x5-inch loaf pan.

  2. Whist together the flour, baking soda, baking powder, salt, ground cinnamon, ground ginger, grates or ground nutmeg, and ground cloves.

  3. Combine in a small bowl the milk and vanilla.

  4. Beat the butter, sugar, and brown sugar in a bowl until fluffy.

  5. Add the eggs into the fluffy mixture one at a time.

  6. Add the pumpkin and beat on low speed just until

  7. blended.

  8. Add the flour mixture in three parts, alternating with the milk mixture, beating on low speed or stirring with a rubber spatula until smooth and scraping the sides of the bowl as necessary.

  9. (Add 1/2 cup of coarsely chopped walnuts of pecans and 1/3 cup of raisins or chopped dates if desired. However I did not include these ingredients in the recipe so the nutrition facts with differ.)

  10. Pour into the prepared pan and spread evenly.

  11. Bake until a toothpick (or butter knife) inserted in the center comes out clean, about 1 hour.

  12. Let cool in the pan on a rack for 5 to 10 minutes before unmolding to cool completely on the rack.
