A recipe that doesn't call for milk or eggs!

Recipe Ingredients for Pumpkin Bread

16 ounces pumpkin, canned
1/2 cup sugar
1/2 cup brown sugar, firmly packed
1/2 cup oil
2 1/2 cups flour
2 t. baking soda
2 t. pumpkin pie spice
1/4 t. salt

Recipe Directions for Pumpkin Bread

  1. Preheat oven to 350. Lightly grease two 9x5 loaf pans.

  2. In large bowl, combine pumpkin, sugar, brown sugar, and oil; mix well.

  3. In separate bowl, sift together flour, baking soda, spice and salt.

  4. Add dry ingredients to the wet ingredients and mix just until the dry ingredients are moistened.

  5. Pour half batter into each pan.

  6. Bake about an hour, until cake tester inserted in center comes out clean.

  7. Remove loaves from the oven and immediately turn them out onto a wire rack. Allow to cool before slicing.
