Makes 3 Loaves (8 x 4 x 3 in-ish loaf pans). 1 serving is 1 slice, assuming 10 slices per loaf. Can use smaller or larger loaf pans to result in 4 smaller loaves or 2 larger loaves.

Recipe Ingredients for Pumpkin Bread

3 cups sugar
1 cup cooking oil
4 eggs
3 1/3 cups flour
2 tsp baking soda
1 1/2 tsp salt
1 tsp cinnamon
1 tsp nutmeg
2/3 cup water
15 oz pumpkin

Recipe Directions for Pumpkin Bread

  1. Preheat oven to 350 degrees.

  2. Grease and flour loaf pans.

  3. In a large bowl, beat sugar and oil on low.

  4. Beat in eggs until just combined and set aside for now.

  5. In a medium bowl, combine flour, baking soda, salt, cinnamon, and nutmeg.

  6. Alternately add flour mixture and water to sugar mixture and beat on medium after each addition until just combined.

  7. Beat in pumpkin.

  8. Spoon mixture into loaf pans and bake for 55 to 65 minutes.

  9. Be sure to check your loaves at 55 minutes to see if they are done, leave in for up to 10 more minutes if they aren't quite done. The best way to test doneness is to poke the middle of the loaf with a toothpick and slowly draw out. If it comes out clean, it's done. If batter/crumb-things come out, it may need a few more minutes or so.
