A great dessert that you can feel good about. It is a good way to end a meal or just with a cup of coffee.

Recipe Ingredients for Pumpkin Bread

3 cups sugar
1 cup oil
2 eggs
2 egg whites
1 tsp nutmeg
1 tsp cinnamon
1 1/2 tsp salt
2 cups pumpkin, cooked and mashed
2/3 cup water
1 tsp baking soda
1/2 tsp baking powder
3 cups flour

Recipe Directions for Pumpkin Bread

  1. Combine sugar, oil, eggs, nutmeg, cinnamon and salt. Beat well.

  2. Add remaining ingredients and mix well.

  3. Pour batter into two loaf pans or 1 bundt pan, which has been well greased. Bake at 350 degrees for 1 hour or until toothpick comes out clean. Remove from pans and cool.

  4. Is good by itself or with a vanilla icing drizzled over.
