Fresh pumpkin bread with applesauce

Recipe Ingredients for Pumpkin bread

1 cup flour
1 cup brown sugar
1 tbsp baking powder
1 tsp cinnamon
1/4 tsp salt
1/4 tsp baking soda
1/4 tsp nutmeg
1/8 tsp ginger
1 cup fresh pumpkin
1/2 cup skim milk
2 eggs
1/3 cup applesauce
1 cup flour

Recipe Directions for Pumpkin bread

  1. Preheat oven to 350 degrees. Grease bottom and sides of 9"x5"x3" loaf pan.

  2. Combine dry ingredients and mix. Add pumpkin, milk, eggs and applesauce and beat for 2 minutes on medium speed. Add 1 cup flour.

  3. Spoon into loaf pan. Bake 60-65 mintues or until toothpick comes out clean. Cool on wire rack for ten minutes. Wrap leftover bread in plastic wrap.
